Scientists have discovered a way to make it even healthier by adding probiotics and prebiotics—two key ingredients known for supporting gut health. This exciting research, published in ACS Food Science & Technology, suggests that chocolate could soon become a functional food that benefits digestion and overall well-being.
The Power of Probiotics in Chocolate
Probiotics are live microorganisms, often found in fermented foods like yogurt and kimchi, that promote a healthy gut microbiome. They help balance the good and bad bacteria in our digestive system, improving digestion and reducing inflammation. However, these beneficial microbes need protection to survive the journey through the stomach to the intestines. That’s where prebiotics come in! Prebiotics are substances like dietary fibers that act as food for probiotics, helping them thrive.
The Science Behind the Sweet Innovation
A team of researchers, Smriti Gaur and Shubhi Singh, tested new ways to combine prebiotics and probiotics in chocolate, making it a supercharged snack. They created five different types of chocolate:
- A basic chocolate with traditional ingredients like cocoa butter and milk powder.
- Four synbiotic chocolates, each containing prebiotics (corn or honey), probiotics (Lactobacillus acidophilus La-14 or Lactobacillus rhamnosus GG), and a flavor additive (cinnamon or orange).
After thorough testing, the results were fascinating: ✔ Enhanced Antioxidants: All probiotic chocolates had higher antioxidant levels than regular chocolate.
✔ Flavor and Texture Changes: The orange-flavored probiotic chocolate had increased moisture, enhanced protein levels, and a slightly softer texture.
✔ Long-lasting Probiotics: Even after 125 days, the probiotic microbes remained viable, making this chocolate a long-term health booster.
The Future of Healthy Chocolate
While chocolate is already a favorite treat worldwide, this innovation could make it even more beneficial. “We personally loved the orange-flavored chocolate—it had a luxurious texture and a vibrant taste,” said Gaur. The researchers are now exploring additional health benefits and flavor combinations to create an even more nutritious and delicious chocolate experience.
